THE BANANA GRANOLA

I really like having granola for breakfast, or any time of the day really, but I much prefer making it myself rather than buying ready made from the super market. Making ones own is so easy and can be adapted to whatever can be found in the pantry at any given time.

/ what you'll need
3 cups oats
1/2 cup almonds, coarsely chopped
1/2 cup pumpkin seeds
1/4 tsp vanilla extract
pitch of sea salt
1/2 tsp cinnamon
3 tbsp coconut oil at room temperature
3 tbsp maple syrup or honey
2 very ripe bananas

/ what you do 
Preheat oven to 200°c. Mix oats, pumpkin seeds and salt in a separate bowl. Mash bananas, coconut oil, syrup/honey and vanilla extract in another. Then mix the two together and spread on a baking trey lined with baking paper. Place the baking trey in the middle of the oven for a total of 15-20 minutes, turning the granola over once or twice while it's in. Then enjoy with plane yogurt or almond milk, topped with raspberries, blueberries (mine were picked last summer and then stored in the freezer) and coconut flakes.

  1. Yummyyy!!! Sounds good!! We make our own granola too, those that you buy have this neverending list of ingredients that scares me a bit!! Our recepy is totally different from yours, it's been a while since we wanted to try something new, can't wait to get all the ingredients and try it out! Maybe I'll post about our granola, it's always nice to share experiences!!

    1. Yes I agree - the list is too long, plus the amount of sugar is astonishing! I would be very curious to see what kind you make :)
